[Keyboard] Update Gergo to use newer Ergodox Matrix code (#5703)
* [Keyboard] Update Gergo to use newer Ergodox Matrix code
And update layout macros to be correct
* Almost forgot the json file
* Remove board specific defines for i2c timeout
